Banana Cake with Caramel Frosting Submitted by: june Putz

Ingredients:
1 package plain yellow cake mix
    1/2 cup brown sugar
    1 teaspoon cinnamon
2 medium-size ripe bananas, peeled & mashed (about 1 cup)
    1/2 cup vegetable oil
    3 large eggs
2 teaspoons creme de banana (liquer)
    1 cup chopped pecans

Recipe:

Preheat oven to 350 degrees. Grease and flour two 9-inch round cake pans. Shake out any excess flour. Set pans aside.

Place the cake mix, brown sugar, and cinnamon in a large mixing bowl. Add the mashed bananas, water, oil, eggs and creme de banana liquer. Blend with electric mixer on low speed for one minute. Stop the mixer and scrape down the sides of bowl. Increase mixer speed to medium and beat two minutes more, scraping down the sides of the bowl again if needed. The batter should look well blended and the bananas should be well pureed. Divide the batter between the two prepared pans and bake 30-35 minutes. Remove pans from oven and place on wire racks to cool for ten minutes. Run a dinner knife around the edge of each layer and turn out of pan onto rack. Cool completely. Frost with Quick Caramel Frosting:

    8 tablespoons butter (1 stick)
1/2 cup packed light brown sugar
1/2 cup packed dark brown sugar
    1/4 cup whole milk
    2 cups confectioners' sugar, sifted
    1 teaspoon vanilla

Place the butter and the brown sugars in a medium-size saucepan over medium heat. Stir and cook until the mixture comes to a boil, about 2 minutes. Add the milk, stir and bring mixture back to a boil, then remove from heat. Add the confectioners' sugar and vanilla. Beat with a wooden spoon until the frosting is smooth.

    * Use immediately (while still warm) to frost cake or the frosting will harden. If it does harden while you are frosting the cake, simply place the pan over low heat and stir unil the frosting softens up.
